Chef's Knife

$550.00

This is a variation of my Western Classic profile, which is an all-purpose European style (a vague term I admit) with a gently curved cutting edge and medium sized blade and handle. There is a lot of distal taper in this blade, with a thick spine under the pinch and a fine tip, as well as a tapered tang. The choil is pretty thick and a little reminiscent of a Sabatier, but thins out very quickly toward the edge. The grind is flat-to-convex, with hollows ground into each side for food release and to reduce cutting friction and weight. The handle material is linen micarta, it has a very subtle texture that is only just visible, and is a durable and moisture resistant material. There is a black G10 liner for contrast.
