Chef's Knife

$550.00

This blade shape is characterized by a dropped point and a fairly flat cutting edge with increased curvature near the tip. There is a ton of distal taper in this blade, with a thick spine under the pinch and a fairly fine and stiff tip, as well as a tapered tang for weight and balance. The grind is flat-to-convex, with hollows ground into each side for food release and to reduce friction and weight. The handle material is linen micarta, it has a very subtle texture that is only just visible, and is a durable and moisture resistant material. I resisted, with great effort, the impulse to buff these handles, leaving a finish that has very good grip when wet.
