Chef's Knife

$550.00

This knife has a dropped point and gently curving cutting edge, with a little more belly near the tip. It has a short neck and a robust convex grind, with a lot of mass and a strong edge back near the heel thinning out to a very fine tip. It has been differentially heat treated, polished and etched to reveal a shadow of the microstructures in the steel. The ten-sided handle is ironwood and brass. This one comes with a custom leather sheath, which I almost tossed but decided to include at a steep discount instead because I accidentally put the snap on the wrong side and the leather has some minor scratches in it. It’s perfectly functional and attractive, just bugs me.
